 Budapest
The City of Budapest actually consists of three cities: Óbuda, the oldest section, with Celtic and Roman ruins on the Buda side of the Danube; Buda in the gently rolling hills on the western bank, famous for its historic Castle Hill and beautiful residential area; and bustling Pest with its shopping, government and commercial districts on the flat plain of the east bank. United in 1873, Budapest is renowned as the location of one of the most beautiful World Heritage sites.

Debrecen - a town wrapped in sunshine
The name of the town appeared in the Várad Regestrum of 1235 for the first time in written documents. Debrecen was only one of the little villages in the region until the beginning of the 13th century. Owing to its landlords it had grown to be a major settlement in the period after the invasion of the Tartars, by the beginning of the 14th century. The Saint Andrew Church was built in early Gothic style in 1311. The Parish Council was formed in 1332; in 1361 the settlement received the privilege of market-town from Louis I (the Great), who granted the town the right of electing its own judges and that a citizen of Debrecen could not be brought before the court in a strange place; then in 1405 Sigismund granted the town privileges that only Buda, the capital had owned before: the people of Debrecen were entitled to hold two country-wide markets every year and were permitted to build a wall around the town.

Cuisine - Hungarian recipes

Hungarian cooking isn't all gulyás [ goulash ] and heavily spiced paprika dishes, just in the same way as Italian isn't all pasta and Indian hot spices. Hungarian dishes have a distinctive, unmistakable character of their own, often rich with sour cream, onions, eggs, butter and wine. An abundance of good local produce, meat and fish make for dishes such as Halászlé [ vissoep ], Sült libamájszelet [ in pan gebakken ganzelever ], Almával töltött fácán [ met appel gevulde fazant ], Szarvastokány erdei gombával (venison stew with wild mushrooms) and Fogasszelet bakonyi módra (fillet of pike-perch Bakony style).

 The Art of Hungarian Cooking
By Paula Pogany Bennett, Velma R. Clark, Willy Pogany (Illustrator)
Songs of Hungary reveal that love and food are closely entwined in the hearts of this frankly and enthusiastically food-loving nation. The Art of Hungarian Cooking is a delightful accomplishment. In Hungary the spirit with which a special dish is cooked is almost as important as the ingredients and the measurements. Hungarian cooking is not spicy. It is pleasing in a sophisticated way, having that indefinable quality which also distinguishes the people. In this book there are many varieties of menus to be found, dishes to bring adventure to your cooking, give satisfaction to you as you cook and hostess over and above all the pleasure and enjoyment these dishes will afford your family and guests.

The Wines of Hngary - by Alex Liddell
This reference to the 22 wine regions of Hungary shows how this country, with its once-proud wine tradition , reinvented itself after 45 years of communism, during which time the entire structure of grape growing and wine production was changed out of recognition. The author details how Hungary's re-adjustment, which still continues, has progressed through privatization, foreign investment and the dedication of small producers struggling to achieve quality standards in the face of a chronic lack of capital. He covers over 300 wine producers, not only from the famous regions like Tokaj and Villany, where significant progress has been made, but also from the lesser-known and as yet underdeveloped regions that suggest the potential to make world-class wines. There are detailed profiles of the leading producers, with assessments of their wines, plus maps detailing the key wine areas.
Paperback 240 pages (February 13, 2003); Publisher: Mitchell Beazley

History of Hungary

Independence: 1001 [ unification by King Stephen I ]

Tradition holds that Hungary was founded by Árpád, who led the Magyars into the Pannonian plains in the 9th century. The Kingdom of Hungary was established in 1000 by King St. Stephen I. Initially the history of Hungary was developed in a triangle with that of Poland and Bohemia, with the many liaisons with Popes and Emperors of the Holy Roman Empire.
Gradually Hungary turned into a large, independent kingdom which formed a distinct Central European culture with ties to greater West European civilisation.
